Beef Stuffed Zucchini #NUTRITION

I tried out a new recipe last night!  We made a zucchini last week, so I decided to try stuffing it with whatever I could find in the fridge :)


I started with ground beef- maybe 1/2 pound or so.  Brown it :)


Cut off the ends of your zucchini & slice it lengthwise.  Scoop out the inside with a spoon (save them for later- it's yummy in lots of different recipes!)


I tossed onion, carrots, & garlic in the food processor- add whatever you have on hand!  It's a good (sneaky!) way to get the kids to eat their veggies!


Blend it all together & toss it in with the cooking meat for a little while


Once the beef is cooked, stuff it in & on your zucchini!  For my hubby's, I also added some cheese we had from the Farmer's Market (garlic goat cheese & mozz - he approved!!)


Add some tomato/pasta/whatever-sauce-you-have on top.  Again, the hubby likes cheese so his side got some parmesan lovin' :)  Toss it in the oven at 400 degrees for 45 minutes.  You might want to check it around 30 minutes- it will depend on how thick you left the zuc when you scooped it out!


And VOILA!  Dinner is served!  This is not a great photo, but it tasted yummy!  Easy, healthy (and paleo is you leave out the cheese & watch the sauce's ingredients!)
